We have been using redmine for a while and the ability to have custom fields in projects come really in-hand, but when managing multiple projects we would like to have the ability to set a workflow to Project Status just as we can for issues.

Use case:

A specific role has the permission to create the project¶

Other specific roles have the ability to change the status to "Active" or "Planninng" or to "Closed"¶

Specific roles would have permission to set custom fields according to the workflow (only some roles can set the project budget, some others can set end date, etc.)¶

This would give redmine a very good flexibility for managing multiple projects in their own process.
